The sweet potato shepherd’s pie has to be my favorite Pinterest recipe thus far. It has even beat out the zucchini lasagna I love so much. Oh man, I could have eaten the entire pan. I thought having the sweet potato topping instead of a mashed potato topping would make the dish taste weird, but I almost prefer the sweet potato version. Also, I omitted a good amount of the ingredients from the original recipe like ground beef, onion, green pepper, flaxseed meal, rosemary, and garlic cloves, and instead put in ground turkey, corn, peas, red pepper, and garlic powder. I do wish that I had baked the dish a little bit longer so that the sweet potato topping had more of a crunch.
